This is one of my favourite recipes so I thought I’d share. It was one of the first real food meals I started making when I stopped eating just soup and apples, prompted by my new self-education about nutrition. At first I could only manage one meal of this a day, then I added lunch and in the last few months breakfast too! My weight hasn’t skyrocketed (wry smile), and I have been feeling more and more ‘with it’ as each day passes.
I can’t say enough, how great it is to be able to finally sleep! After a year of broken, restless, light, maddeningly absent sleep, I feel so good! Ahhh but I’ve got a LOT of catching up to do on weekends… zzzzzz… don’t you love Winter sleep-ins? Cosy.
Anyway, enough rambling, here’s the recipe.
Lou’s Delish Eggplant Dish
2 large shiny eggplants, thickly sliced (depending on size of pan)
3 cloves of garlic, crushed
enough thickly sliced tomato (or halved roma tomatoes) to cover eggplant slices
Extra virgin cold pressed olive oil
Large handful of sharp cheese like romano or parmesan or… your choice!
1. Heat up a large heavy frypan (with lid) on medium heat
2. Pour some olive oil in base of pan and spread garlic out over whole surface
3. Lay eggplants over that and season with a little salt to taste
4. Lay tomatoes over eggplants
5. Drizzle with olive oil and cover with lid for 15 - 20 mins
6. Check to see how it’s all doing, might need a bit more, when tomatoes are soft and your house smells wonderful, you’re getting close!
7. When nearly done, sprinkle cheese over top and cover until cheese is melted.
8. Garnish with chopped fresh parsley and black pepper and serve!
Can use as a side dish or an appetiser. Very yummy. Serves two generously but you can adjust easily for more or less people. You can also do this in the oven, but it tends to be a bit wetter. In the pan the garlic and tomato juices caramelize a little. Oh I’m hungry now! Maybe I’ll make it tonight….
